The flatness talked about here does not have to do with a supposed two-dimensionality, but with something quite more elusive. The other options beside being flat are being spherical and being hyperbolical. The results of being spherical would be that a projectile moving in a straight trajectory would arrive at the same location after a very long time (compare this to a straight line in spherical geometry). I am not well-informed about the argument, but the difference between flat geometry and hyperbolical geometry seem conceptually 'obvious' to me, though I am not sure what that difference would result in.
