Fair -> Nair -> Nair is fantastic on all characters. Once you have them offstage, just float there and place Nairs until they run into one.
MK can chase people offstage forever so 90% of the time a character offstage against a MK is done for.

A properly spaced (soft) Nair will beat DK's spinning kong, (aim for his head) as long as you wait for the initial hit to end. Rinse repeat until he's too low to recover.

I definitely think Meta Knight is still viable if not high tier. The aerial movement helps a lot, and I think Fair and Bair might have more range now. He plays a bit more like in Brawl. I used MK in brawl as main along with Marth and so far I like 0.9b Meta Knight more then 0.9a Meta Knight. Dair was definitely OP in 0.9a.

Did they seriously reduce the cooldown time on his fair and bair? The only signifigant differences I see are in his dair and s-special. His dair gives crazy horizontal knockback, and is much slower. His down special has more cooldown time, and is more punishable when the attack misses.
Surprisingly, Meta Knight looks like his air game has been buffed.

In all seriousness, I expected it to be better, but like you said, it wasn't the best match you had so I'm sure his MK is better than mine -3- (after all I did start using him 2 weeks ago)

Not familiar with the last demo version, but I imagine his tornado and drill were better, because they can't be much worse now. My biggest gripe is the lag on his dair. It's just about unusable. Better to nair or fair. Still viable and close to top tier if not so.
