When people say shield DI, I think i'm supposed to shield and then press left or right, right?

But if I do that, wouldn't I end up rolling? or do I keep the shield and press right or left as soon as someone hits me? or??

Shield DI is like smash DI. You man move slightly while in shield stun by pressing left or right. C-stick might work too.

You do the inputs during Shield-stun, once you see your character not in a freeze-frame, you stop. Just like you would stop mashing A & B once you see you got out of a grab-release.

And like Bunq mentioned, you can do it with C-stick without worry of doing too many inputs into a roll.
