Fireballs seem to be one of the most obnoxiously good projectiles in the game for one simple reason.

They're land-cancellable.

I think Luigi's would be better due to their trajectory, but they're stuck on, well, Luigi. Mario can completely control the ground in front of him by just spamming SHFF fireballs, while Luigi controls the airspace directly in front of him. Still, Mario can force opponents into approaching through the air or via a platform. And we all know how good of an anti-air usmash is.

Can you add more moves from the Mario series? If I wanted to play Melee Mario, I would just play Melee. I want to see Mario from the Super Mario series (items, fludd, hat toss, star spin, HAMMER, GROUND POUND)
Same with Luigi

Star Spin is literally in the game as his Down Special except its multi-hit, he uses the Cape powerup from Mario World, the Fireball (as in, THE most OG powerup Mario has), FSmash is presumably the Firebrand from Superstar Saga and Fludd just sucks. Hammer would be dope (new DSmash? Fair but disjointe- nvm no that sounds silly), but the Ground Pound wouldnt really fit in his moveset without feeling awkward. Hat Toss is a rather unreasonable demand seeing as Beta technically released before Odyssey came out, even if the Capture feature was announced beforehand. Would just be another projectile anyway (and no, possessing opponents is not gonna work and a stupid concept in general, dont even go there).

And as another user so helpfully pointed out above, Fireballs autocancel in this game upon landing, already giving Mario a very distinct difference from his Melee incarnation because now he has one of the most spammable projectiles in the game to safely apply pressure with. Then you add a vastly superior movement speed, a buffed recovery and the fix of arguably his biggest issue in Melee (reliable KO power) and you get a Mario that looks similar enough but plays surprisingly different given Marios rather basic design.

How aboout Fsmash? It could easily replace Firebrand to represent the M&L series. It would be a bit slower but have a bigger arced hitbox like Marth's and obviously no fire element. (You could also give luigi a horizontal hammer swing with a similar but slightly vertically wider hitbox compared to his current one.)

Super Smash Bros Crusade's Dr. Mario has a ground pound and it feels fine. It stops after he travels down a bit and buries grounded opponents. I don't want the capture mechanic, just the hat toss and the ability to jump off the hat. His down special may have the white luma but functions so similarly to the Mario Tornado from melee that it seems it has the star entirely to connect it to the Mario series. In Galaxy the star spin wasn't a more mobile hurricane kick; it was essentially a punch on all sides that doubled as a short jump in the air. I would expect this move to be Mario's nair; a quick attack at all sides that will only kill at like over 300%. Hammer would be awesome as one or more of his smash attacks. His side special functions nothing like the cape in Super Mario World. There it's an item that lets you fall slowly like the tanooki suit, fly like brawl Meta-Knight, and spin like nobody's business. In Smash it's shine mixed with dancing blade and a wind box (Ironically the Star Spin in Galaxy was both an aerial boost up and a reflector). Fireballs are fine, but that's the only one to one Mario series reference; outside of taunts, his back throw, his down smash, and his three jabs. Also I would make his up special the propeller mushroom (or just the helmet, the propeller block, or the propeller box), his current one is funny and was initially clever, but feels like a lazy reference used to not have to think up a new up special. I also would bring back the SM64 star victory. Also his FSmash was introduced in Melee and was in Smash before Superstar Saga existed. It's fine though. I also would make his forward throw and up throw kicks, like how he kicks shells (and don't tell me it wouldn't work because Sonic and Ryu do it and works fine). I just expect more with the entire Mario series to pull from, and all we get is jumpy Bob Hoskins with fireballs and a towel.
